Recipe: Looking for a delicious and easy pork tenderloin recipe? Try this bacon-wrapped, barbecue-glazed pork tenderloin! Start by seasoning the meat with your favorite rub, then wrap it in bacon. While it bakes at 400°F, make a glaze with barbecue sauce, honey, and seasoning. Baste the pork as it cooks to build layers of flavor. Once the internal temperature reaches 145°F, let it rest to keep the meat juicy.
One of the tricks I like to do with bacon is to cut it in half. Next, we'll clean up the pork tenderloin. Grab a foil-lined baking sheet and a rack. Take your pork tenderloin out of the package, dry it off a little, and clean it up. You can remove some of the silver skin if you like. Just take your knife and go right between the meat and the skin, bringing the knife tip up towards the silver skin. Let your knife slide right under it, and that's how you remove the silver skin. This part of the meat is a bit tough, so you can discard it.
Now, we’re going to take our barbecue rub—this is our Flavor Formula Rub—and season your meat. Once it's seasoned, take your bacon and lay it over the pork tenderloin. By overlapping the bacon pieces and tucking them under, it makes it easy to wrap.
Don't forget to add a little more seasoning on top of the bacon. Now we're ready to place the bacon-wrapped tenderloin in the oven. Set your oven to 400°F.
Making the Glaze
While the pork tenderloin is cooking, let's make our glaze. We've got some of our seasoning, just a little bit, along with barbecue sauce (one, two, and three scoops), and then some honey (about one scoop). Mix that up and stir it well. If you want it sweeter, add more honey.
Look at that glaze! While the pork tenderloin is cooking, you'll want to baste it using a silicone brush (or a spoon if you don’t have one). You want to build up layers of flavor on the pork tenderloin.
As the pork is cooking and the fat from the bacon is starting to render, apply a little of this glaze we prepared on top. You can use either a spoon or a silicone brush to spread it evenly. Then, put it back in the oven and continue to baste the pork tenderloin. We’re building up layers of flavor here as the barbecue sauce concentrates and cooks into the meat.
Finishing Up
Alright, guys, take a look at that beautiful pork tenderloin! The internal temperature should read 152°F. Once you take it out of the oven, let it rest. As you can see, the temperature will continue to rise due to carryover cooking. You want to cook it to at least 145°F, then let it rest for about 4 to 5 minutes.
Oh man, look at that! Now, we've got our pork tenderloin with the bacon and glaze perfectly intact. Let’s go ahead and cut into it. There it is—that's the shot right there!
Tasting Time
Alright, guys, let's give this a taste. We've got our beautiful bacon-wrapped, barbecue-glazed pork tenderloin. We seasoned it, wrapped it in bacon, seasoned it again, built up a barbecue glaze, basted it a few times while it was cooking, and let it rest.
Now, let's try it... That is fantastic, guys! By letting it rest, the juices redistribute, giving you a moist piece of pork. This is not dry at all.
Hope you enjoy!
