The Simple Costco Muffin Hack

This Costco muffin hack is very simple. You're gonna take either vanilla or chocolate cake mix. If you didn't know, Costco pretty much uses cake mix in their muffins.

That's why they're so moist and pink like they almost taste like you're eating a cupcake. So you're gonna add this to a bowl with three eggs. Here I have one-third cup of oil.

You can use a little bit of half butter and half oil. Unfortunately, these muffins have oil, that's what makes them so moist. But a little oil is okay, you won't be able to taste it with this buttermilk that we're going to be adding. If you're just gonna add butter, remember that butter is like 16 to 80 water, so they're not going to be as moist as if you just use the plain oil.

Here I have two-thirds cup of buttermilk. You can use regular milk if you like. I just decided to amp it up a little. This is two tablespoons of flour. Then last but not least, a teaspoon of baking powder. Now I'm gonna mix this up.

I'm gonna reserve some of the batter, and I'm going to add some poppy seed and a little teaspoon of almond extract. Nothing like a good blueberry muffin!

Wow, that's gonna be pretty big! There we go. This took quite a while to make these muffin tins, but I filled everything up. I got the almond poppy seed, chocolates, and blueberry. I'm gonna pop these in the oven at 375 for around 25 to 30 minutes.
